- 2 cups cooked chicken, shredded
- 1 cup corn kernels
- 1 cup cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 8 ounces cooked pasta, such as penne or rotini
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, corn, cream of chicken soup, sour cream, half of the cheese, chili powder, cumin, and cooked pasta. Mix well.
- Pour this mixture into a greased casserole dish and spread it out evenly.
- Top with the remaining cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
- This casserole can be made ahead of time and stored in the refrigerator.
- For a spicy kick, add some diced jalapeños to the mixture.
