- 2 cups cooked chicken, shredded
- 1 cup sweet corn, canned or frozen
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 tablespoon taco seasoning
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1 cup tortilla chips, crushed
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, sweet corn, sour cream, shredded cheddar cheese, taco seasoning, bell pepper, and onion. Mix well.
- Spread the mixture into a greased baking dish.
- Top with crushed tortilla chips and drizzle with olive oil.
- Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
Notes
- For a spicier version, add jalapeños to the mixture.
- You can use leftover turkey instead of chicken.
