- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup dried cranberries, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the spinach, cream cheese, mozzarella, cranberries, garlic powder, salt, and pepper.
- Cut a pocket into each chicken breast and stuff with the spinach mixture.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for about 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes until the chicken is cooked through.
Notes
- For a richer flavor, add herbs like thyme or rosemary to the stuffing.
- Serve with a side of roasted vegetables.
