Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup dried cranberries, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the spinach, cream cheese, mozzarella, cranberries, garlic powder, salt, and pepper.
  3. Cut a pocket into each chicken breast and stuff with the spinach mixture.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for about 3-4 minutes on each side.
  5. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes until the chicken is cooked through.
