- 1 pound ground beef
- 1/2 pound turkey bacon, chopped
- 2 cups bell peppers, diced
- 1 cup onion, diced
- 2 cups cooked rice
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef and turkey bacon over medium heat until browned.
- Add the diced bell peppers and onion, cooking until softened.
- Stir in the cooked rice, diced tomatoes, garlic powder, and Italian seasoning. Mix well.
- Transfer the mixture to a casserole dish and top with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
Notes
- For a spicier dish, add jalapeños or red pepper flakes.
- This casserole can be made ahead of time and stored in the refrigerator.
