- 1 green bell pepper, diced

- 2 cups diced tomatoes

- 1/2 teaspoon black pepper
- 1 cup shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef with the onion.
- Add the diced green and red bell peppers and cook until tender.
- Stir in the cooked rice, tomatoes, and seasonings. Mix well.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes until cheese is bubbly.
Notes
- Feel free to add more vegetables according to your preference.
- For a little heat, consider adding some diced jalapeños.
