- 4 medium zucchini
- 1 pound Italian sausage
- 1 cup shredded mozzarella cheese
- 1/2 cup marinara sauce
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the insides.
- In a skillet, cook the sausage over medium heat until browned.
- Add the zucchini flesh, marinara sauce, and Italian seasoning to the skillet, and cook for another 5 minutes.
- Remove from heat and stir in the mozzarella cheese.
- Fill the zucchini halves with the sausage mixture and sprinkle with Parmesan cheese.
- Bake for 25-30 minutes or until the zucchinis are tender.
Notes
- For added flavor, you can top with fresh basil before serving.
