  • 4 medium zucchini
  • 1 pound Italian sausage

  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, cook the sausage over medium heat until browned.
  4. Add the zucchini flesh, marinara sauce, and Italian seasoning to the skillet, and cook for another 5 minutes.
  5. Remove from heat and stir in the mozzarella cheese.
  6. Fill the zucchini halves with the sausage mixture and sprinkle with Parmesan cheese.
  7. Bake for 25-30 minutes or until the zucchinis are tender.
