- 4 medium zucchinis
- 1 cup cooked turkey bacon, chopped
- 1 cup diced tomatoes
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped onion

- Black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the insides, creating boats.
- In a skillet, sauté onions and garlic until soft.
- Add turkey bacon, diced tomatoes, Italian seasoning, salt, and pepper; cook for a few minutes.
- Fill each zucchini boat with the mixture and top with mozzarella cheese.
- Bake in the oven for 25-30 minutes or until the zucchinis are tender.
