- 2 slices bread
- 1/2 cup ricotta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon grated Parmesan cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Spread ricotta cheese on one slice of bread.
- Top with sun-dried tomatoes, spinach, salt, pepper, and Parmesan cheese.
- Place the other slice of bread on top.
- Cook in the skillet until golden brown, about 3-4 minutes per side.
- Remove from skillet, slice, and serve warm.
Notes
- For extra flavor, add garlic powder to the ricotta mixture.
- Pair with a side salad for a complete meal.
