- 2 slices of bread
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Spread olive oil on one side of each slice of bread.
- In a bowl, mix sun-dried tomatoes, spinach, ricotta cheese, salt, and pepper.
- Place one slice of bread, oil side down, in a skillet over medium heat.
- Spoon the cheese mixture onto the bread in the skillet.
- Top with shredded mozzarella cheese.
- Cover with the second slice of bread, oil side up.
- Grill for about 3-4 minutes on each side, until golden brown and cheese is melted.
- Remove from heat, slice, and serve warm.
Notes
- For a crispy texture, you can use a panini press.
- Feel free to add additional herbs like basil or oregano for more flavor.
