A deliciously creamy and tangy grilled cheese sandwich featuring sun-dried tomatoes, fresh spinach, and rich ricotta cheese.

Ingredients

  • 2 slices of bread
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Spread olive oil on one side of each slice of bread.
  2. In a bowl, mix sun-dried tomatoes, spinach, ricotta cheese, salt, and pepper.
  3. Place one slice of bread, oil side down, in a skillet over medium heat.
  4. Spoon the cheese mixture onto the bread in the skillet.
  5. Top with shredded mozzarella cheese.
  6. Cover with the second slice of bread, oil side up.
  7. Grill for about 3-4 minutes on each side, until golden brown and cheese is melted.
  8. Remove from heat, slice, and serve warm.

Notes

  • For a crispy texture, you can use a panini press.
  • Feel free to add additional herbs like basil or oregano for more flavor.
