- 2 slices bread

- 1/4 cup sun-dried tomatoes, chopped

Instructions
- Spread ricotta cheese on one side of each bread slice.
- Top one slice with sun-dried tomatoes, spinach, garlic powder, salt, and pepper.
- Place the other slice of bread on top, cheese side down.
- Melt butter in a skillet over medium heat.
- Add the sandwich and cook until golden brown on both sides and the cheese is melted.
