- 2 pounds beef roast
- 2 medium onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons vegetable oil
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Preheat your oven to 325°F (165°C).
- In a large oven-safe pot, heat the vegetable oil over medium-high heat. Sear the beef roast on all sides until browned.
- Add the sliced onions and minced garlic, sautéing until the onions are translucent.
- Season with paprika, salt, pepper, and thyme.
- Pour in the beef broth, cover the pot, and transfer it to the oven.
- Roast for about 2 hours or until the meat is tender.
- Remove from oven and let rest before slicing.
Notes
- For a richer flavor, marinate the beef in the spices overnight.
- Serve with traditional Swabian spätzle or dumplings.
