- 2 pounds boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 1 cup teriyaki sauce
- 1/2 cup bell pepper, sliced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
Instructions
- Place the chicken thighs at the bottom of the crock pot.
- Top with pineapple chunks, teriyaki sauce, bell pepper, onion, garlic, and ginger.
- Stir to combine all ingredients well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- When done, shred the chicken with two forks and stir to combine with the sauce.
- Serve over rice or noodles.
Notes
- For added flavor, marinate the chicken in teriyaki sauce for a few hours before cooking.
- You can use chicken breasts instead of thighs if preferred.
