Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup pineapple chunks
  • 1 cup teriyaki sauce
  • 1/2 cup bell pepper, sliced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Place the chicken thighs at the bottom of the crock pot.
  2. Top with pineapple chunks, teriyaki sauce, bell pepper, onion, garlic, and ginger.
  3. Stir to combine all ingredients well.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. When done, shred the chicken with two forks and stir to combine with the sauce.
  6. Serve over rice or noodles.

Notes

  • For added flavor, marinate the chicken in teriyaki sauce for a few hours before cooking.
  • You can use chicken breasts instead of thighs if preferred.
