Ingredients

  • 2 cups diced pineapple
  • 1 cup finely chopped jalapeño peppers
  • 1/2 cup chopped red onion
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 clove minced garlic

Instructions

  1. In a large bowl, combine the diced pineapple, jalapeño peppers, and red onion.
  2. In a separate bowl, whisk together the apple cider vinegar, brown sugar, salt, black pepper, and garlic until the sugar is dissolved.
  3. Pour the vinegar mixture over the pineapple mixture and stir well.
  4. Transfer the mixture to a saucepan and bring to a boil over medium heat.
  5. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  6. Remove from heat and let cool slightly before transferring to sterilized jars.
  7. Seal the jars and let them cool completely before storing in the refrigerator.
