- 2 cups diced pineapple
- 1 cup finely chopped jalapeño peppers
- 1/2 cup chopped red onion
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 clove minced garlic
Instructions
- In a large bowl, combine the diced pineapple, jalapeño peppers, and red onion.
- In a separate bowl, whisk together the apple cider vinegar, brown sugar, salt, black pepper, and garlic until the sugar is dissolved.
- Pour the vinegar mixture over the pineapple mixture and stir well.
- Transfer the mixture to a saucepan and bring to a boil over medium heat.
- Reduce heat and let simmer for 20 minutes, stirring occasionally.
- Remove from heat and let cool slightly before transferring to sterilized jars.
- Seal the jars and let them cool completely before storing in the refrigerator.
Notes
- For a spicier relish, keep the seeds in the jalapeños.
- This relish pairs excellently with grilled meats or as a topping on sandwiches.
