Ingredients

  • 1 cup cooked and mashed sweet potatoes
  • 2 cups cream cheese
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter to form the crust.
  3. Press the crust mixture into the bottom of a greased square baking dish.
  4. In another bowl, mix the mashed sweet potatoes, cream cheese, sugar, eggs, vanilla, cinnamon, nutmeg, and salt until smooth.
  5. Pour the cheesecake mixture over the crust in the baking dish.
  6. Bake for 30-35 minutes until set.
  7. Let it cool before cutting into squares.
