- 2 cups mashed sweet potatoes
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs and melted butter, then press into the bottom of a baking dish.
- In another bowl, combine the mashed sweet potatoes, brown sugar, cinnamon, nutmeg, salt, coconut milk, and vanilla extract until smooth.
- Pour the sweet potato mixture over the crust and smooth the top.
- Bake for 35-40 minutes or until set. Let cool before cutting into bars.

- These bars are best served chilled.
- Top with whipped cream for an extra indulgent treat.
