- 4 large russet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup salsa
- 1 medium diced tomato
- 1/2 cup sliced green onions
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and poke holes in the potatoes, then bake for 45-60 minutes until tender.
- While the potatoes are baking, brown the ground beef in a skillet over medium heat.
- Add the taco seasoning to the beef along with a little water and let it simmer.
- Once the potatoes are done, let them cool slightly, then cut them open and fluff the insides with a fork.
- Top each potato with the seasoned beef, cheddar cheese, sour cream, salsa, diced tomato, green onions, and cilantro.

- For a vegetarian option, substitute ground beef with lentils or black beans.
