- 1 lb ground beef
- 8 oz elbow macaroni
- 1 packet ranch seasoning mix
- 1 can (10.5 oz) cream of cheddar or mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 2 cups shredded cheddar cheese (divided)
- Salt and pepper, to taste
- Optional: green onions or parsley for garnish
Instructions
- Cook macaroni according to package directions. Drain and set aside.
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add ranch seasoning, salt, and pepper to the beef. Stir well.
- Reduce heat to low. Add soup, sour cream, and milk. Stir until creamy.
- Mix in 1½ cups cheddar cheese and cooked macaroni. Stir until combined and melted.
- Optional: Transfer to a baking dish, top with remaining cheese, and bake at 375°F for 10–15 minutes until bubbly.
- Garnish and serve warm.
Notes
- Use Greek yogurt instead of sour cream for a lighter version.
- Try ground turkey or chicken for a leaner protein.
- Add sautéed mushrooms, bell peppers, or spinach for more flavor and texture.
