- 2 cups dumplings

- fresh cilantro for garnish
Instructions
- Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until fragrant.
- Stir in the red curry paste and cook for another minute.
- Add the vegetable broth and coconut milk, bringing the mixture to a gentle simmer.
- Drop in the dumplings and cook for about 5-7 minutes until they are cooked through.
- Add the spinach and cook until wilted.
- Stir in lime juice, soy sauce, and sugar. Adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro.

- Feel free to add additional vegetables like bell peppers or carrots for more flavor and texture.
