- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 4 cups vegetable broth
- 1 can (14 ounces) coconut milk
- 2 cups mixed vegetables (carrots, bell peppers, broccoli)
- 1 package (12 ounces) dumplings (fresh or frozen)
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion and garlic, and sauté until the onion becomes translucent.
- Stir in the red curry paste and cook for an additional minute.
- Pour in the vegetable broth and coconut milk, and bring to a simmer.
- Add the mixed vegetables and dumplings, cooking until the dumplings are heated through.
- Stir in the soy sauce and lime juice just before serving.
- Garnish with fresh cilantro.
Notes
- For a spicier soup, add more red curry paste according to taste.
- You can substitute the dumplings with rice noodles if desired.
