  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can (14 ounces) coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 1 package (12 ounces) dumplings (fresh or frozen)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the diced onion and garlic, and sauté until the onion becomes translucent.
  3. Stir in the red curry paste and cook for an additional minute.
  4. Pour in the vegetable broth and coconut milk, and bring to a simmer.
  5. Add the mixed vegetables and dumplings, cooking until the dumplings are heated through.
  6. Stir in the soy sauce and lime juice just before serving.
  7. Garnish with fresh cilantro.

Notes

  • For a spicier soup, add more red curry paste according to taste.
  • You can substitute the dumplings with rice noodles if desired.
