- 2 medium zucchinis, grated

Instructions
- Grate zucchini and squeeze out moisture using a towel or cheesecloth.
- In a bowl, mix zucchini, egg, flour, Parmesan, salt, and pepper.
- Heat oil in a skillet over medium heat.
- Scoop 2 tablespoons of batter per fritter into the skillet and flatten slightly.
- Cook for 3–4 minutes per side until golden and crispy.
- Drain on paper towels and serve warm.
Notes
- Add chopped herbs for extra flavor.
- Swap Parmesan with feta for a tangy twist.
- To bake: 400°F for 20 mins, flip halfway.
