- 4 ripe bananas
- 1 box vanilla wafers
- 1 cup heavy cream
- 1 cup milk
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine milk, cream, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until thickened.
- Whisk eggs in a bowl and slowly add some of the hot mixture to the eggs to temper them.
- Return the egg mixture to the saucepan, cook for an additional 2-3 minutes.
- Remove from heat and stir in vanilla extract.
- Layer vanilla wafers, sliced bananas, and pudding in a serving dish.
- Refrigerate for at least 4 hours before serving.
Notes
- For a thicker pudding, allow to cool longer before serving.
- Use ripe bananas for the best flavor.
