- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 4 slices turkey bacon
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir just until combined; be careful not to overmix.
- Heat a skillet over medium heat and grease lightly.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- In a separate pan, cook the turkey bacon until crispy.
- Serve the pancakes warm with crispy turkey bacon.
Notes
- For extra fluffiness, let the batter rest for 5 minutes before cooking.
- Feel free to add blueberries or chocolate chips for a twist!
