Instructions

- Reduce the heat and let the mixture simmer for about 5-7 minutes, or until it reaches a soft ball stage.
- Remove from heat and stir in the chopped pecans and vanilla extract.
- Drop spoonfuls of the mixture onto parchment paper and let them cool until set.
