- 1 cup cottage cheese
- ½ cup sour cream
- 1 lb ground beef
- 1 small onion, chopped
- 2 cups egg noodles (uncooked)
- 1 (15 oz) can tomato sauce
- 1 (8 oz) can tomato paste
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Boil egg noodles according to package instructions. Drain and set aside.
- In a skillet, cook ground beef and onion until browned. Drain fat.
- Add tomato sauce, paste, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- In a bowl, mix cottage cheese and sour cream.
- Layer half the noodles in dish, followed by half the creamy mix, then half the meat sauce. Repeat layers.
- Top with cheddar and mozzarella cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
- Let rest for 5 minutes before serving. Garnish with parsley if desired.
Notes
- Substitute cream cheese for cottage cheese for a richer texture.
- Add chopped veggies like spinach or bell peppers.
- This casserole freezes well—prepare two and freeze one.
