- 1 cup crushed pineapple
- 2 cups cream cheese

Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add in vanilla extract, sour cream, and lemon juice, mixing until well combined.
- Stir in crushed pineapple.
- Pour the cream cheese mixture over the crust and smooth the top.
- Bake for 50 minutes or until set.
- Let cool and refrigerate for at least 4 hours before serving.
Notes
- For a creamier texture, use full-fat cream cheese.
- Top with additional pineapple before serving for extra flavor.
