- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup diced chicken ham
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chives, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and poke holes in them with a fork.
- Bake the potatoes in the oven for about 45 minutes or until tender.
- While the potatoes are baking, cook the turkey bacon until crispy and then chop it into small pieces.
- In a bowl, mix the chopped turkey bacon, chicken ham, cheddar cheese, sour cream, chives, garlic powder, and season with salt and pepper.
- Once the potatoes are done, cut them in half and scoop out some of the flesh to make room for the filling.
- Stuff each potato half with the bacon and ham mixture.
- Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes or until heated through.
- Serve hot and enjoy!
Notes
- For a spicy kick, consider adding jalapeños to the filling.
- These stuffed potatoes can also be frozen before baking for an easy meal prep option.
