  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chives, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke holes in them with a fork.
  3. Bake the potatoes in the oven for about 45 minutes or until tender.
  4. While the potatoes are baking, cook the turkey bacon until crispy and then chop it into small pieces.
  5. In a bowl, mix the chopped turkey bacon, chicken ham, cheddar cheese, sour cream, chives, garlic powder, and season with salt and pepper.
  6. Once the potatoes are done, cut them in half and scoop out some of the flesh to make room for the filling.
  7. Stuff each potato half with the bacon and ham mixture.
  8. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes or until heated through.
  9. Serve hot and enjoy!

Notes

  • For a spicy kick, consider adding jalapeños to the filling.
