Instructions
- In a large pot, cook the orzo according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add shrimp to the skillet, seasoning with Italian seasoning, salt, and black pepper. Cook until shrimp is pink and opaque.
- Add cherry tomatoes and spinach to the skillet, cooking until spinach wilts.
- Toss in the cooked orzo and parmesan cheese, mixing well to combine.
- Serve immediately, garnished with extra parmesan if desired.
