Ingredients

- 2 cups heavy whipping cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean
- 4 large egg yolks
- 2 tablespoons gelatin powder
- 1/4 cup cold water
- 1 cup red currants
- 1/2 cup water
- 1/4 cup lemon juice
- 1/2 cup sugar
Instructions
- In a saucepan, heat the milk, sugar, and vanilla bean until the sugar is dissolved.
- In a separate bowl, whisk egg yolks and gradually add the hot milk mixture.
- Return to low heat and cook until thickened, then remove from heat.
- Sprinkle gelatin over cold water and let it bloom, then stir into the warm custard.
- Fold in whipped cream until well combined.
- Pour into heart-shaped molds and refrigerate until set.
- Meanwhile, prepare the red currant gelée by simmering currants, water, lemon juice, and sugar until thickened.
- Allow the gelée to cool then pour over the set mousse.
- For the ruby mirror glaze, combine ingredients and pour over the gelée.
- Chill until the glaze is set, then remove from molds and serve.
Notes
- Can substitute red currants with other berries e.g., raspberries.
- Make ahead of time for a stress-free dessert.
