Ingredients

  • 2 cups heavy whipping cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean
  • 4 large egg yolks
  • 2 tablespoons gelatin powder
  • 1/4 cup cold water
  • 1 cup red currants
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1/2 cup sugar

Instructions

  1. In a saucepan, heat the milk, sugar, and vanilla bean until the sugar is dissolved.
  2. In a separate bowl, whisk egg yolks and gradually add the hot milk mixture.
  3. Return to low heat and cook until thickened, then remove from heat.
  4. Sprinkle gelatin over cold water and let it bloom, then stir into the warm custard.
  5. Fold in whipped cream until well combined.
  6. Pour into heart-shaped molds and refrigerate until set.
  7. Meanwhile, prepare the red currant gelée by simmering currants, water, lemon juice, and sugar until thickened.
  8. Allow the gelée to cool then pour over the set mousse.
  9. For the ruby mirror glaze, combine ingredients and pour over the gelée.
  10. Chill until the glaze is set, then remove from molds and serve.
