Ingredients

- 2 cups mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup coconut milk
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp paprika
- 8 oz pasta
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat and sauté the onions until translucent.
- Add mushrooms and garlic; cook until mushrooms are browned.
- Stir in vegetable broth, coconut milk, soy sauce, and paprika. Bring to a simmer.
- Mix cornstarch with a little water, then stir into the sauce to thicken.
- Cook pasta according to package instructions, drain and add to the sauce.
- Serve hot and enjoy!
Notes
- For extra flavor, add nutritional yeast.
- Try serving over rice instead of pasta for a different twist.
