Ingredients

  • 12 large mushrooms
  • 1 cup cooked wild rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the spinach and cook until wilted.
  4. In a bowl, mix the cooked wild rice, sautéed vegetables, cream cheese, Parmesan cheese, thyme, salt, and pepper.
  5. Stuff each mushroom cap with the rice mixture.
  6. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes until golden.
  7. Serve warm and enjoy!

Notes

  • Feel free to add other vegetables as desired.
