  • 2 tablespoons cocoa powder

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  6. Mix in the brewed coffee, coffee liqueur, and vanilla extract.
  7. Pour the cheesecake filling over the prepared crust.
  8. Bake for 50-60 minutes or until the edges are set, but the center is slightly jiggly.
  9. Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
  10. Before serving, dust the top with cocoa powder.
