- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1/2 cup strong brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Mix in the brewed coffee, coffee liqueur, and vanilla extract.
- Pour the cheesecake filling over the prepared crust.
- Bake for 50-60 minutes or until the edges are set, but the center is slightly jiggly.
- Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
- Before serving, dust the top with cocoa powder.
Notes
- For best results, use room temperature cream cheese.
- Letting the cheesecake chill overnight enhances the flavor and texture.
