- 2 cups cooked, shredded chicken
- 1 cup sour cream
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1/2 cup diced onions
- 1/2 cup diced green chilies
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, sour cream, enchilada sauce, half of the cheese, onions, and green chilies.
- In a baking dish, layer corn tortillas, then spread half of the chicken mixture over them.
- Add another layer of tortillas, remaining chicken mixture, and top with remaining cheese.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- For extra flavor, add spices such as cumin or chili powder to the chicken mixture.
