Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ½ cups fresh cranberries
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Melt the white chocolate chips in the microwave or over a double boiler.
  5. In a mixing bowl, beat together the cream cheese and sugar until smooth.
  6. Add the melted white chocolate and vanilla; mix until combined.
  7. Add eggs one at a time, mixing well after each addition.
  8. Stir in the cranberries and sour cream.
  9. Pour the cheesecake mixture over the crust in the springform pan.
  10. Bake for 50-60 minutes, or until the center is set.
  11. Let cool, then refrigerate for at least 4 hours before serving.
