- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup white chocolate chips
- 16 oz cream cheese, softened
- ½ cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 ½ cups fresh cranberries
- ½ cup sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan.
- Melt the white chocolate chips in the microwave or over a double boiler.
- In a mixing bowl, beat together the cream cheese and sugar until smooth.
- Add the melted white chocolate and vanilla; mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in the cranberries and sour cream.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Make sure all ingredients are at room temperature for best results.
- Top with additional cranberries and white chocolate shavings for garnish.
