- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and milk until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Pour half of the batter into one of the prepared pans and set aside.
- In another bowl, beat together cream cheese and powdered sugar until smooth.
- Spread the cream cheese mixture over the batter in the first pan.
- Pour the remaining cake batter over the cream cheese layer and then spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool in pans for 10 minutes before transferring to a wire rack.
- Once cool, frost with whipped cream and sprinkle with shredded coconut and chopped pecans.
