  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract and milk until combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  7. Pour half of the batter into one of the prepared pans and set aside.
  8. In another bowl, beat together cream cheese and powdered sugar until smooth.
  9. Spread the cream cheese mixture over the batter in the first pan.
  10. Pour the remaining cake batter over the cream cheese layer and then spread evenly.
  11. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  12. Let cool in pans for 10 minutes before transferring to a wire rack.
  13. Once cool, frost with whipped cream and sprinkle with shredded coconut and chopped pecans.
