- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans.
- Combine white cake ingredients in a bowl. Mix until smooth.
- Divide batter evenly between pans. Bake for 25-30 minutes. Cool completely.
- Make Coconut-Pecan Frosting:
- Melt butter in a saucepan. Add sugar, evaporated milk, egg yolks, and vanilla.
- Cook on medium heat for 10-12 minutes, stirring constantly, until thickened.
- Stir in coconut and pecans. Let cool before use.
- Prepare Cheesecake Layer (Optional):
- Blend cream cheese, powdered sugar, and vanilla until smooth. Chill briefly.
- Assemble the Cake:
- Spread frosting on the first cake layer. Add cheesecake layer if desired.
- Top with the second cake layer. Frost the top and sides with remaining frosting.

- Refrigerate for at least 30 minutes before serving for easier slicing.
- To adjust for dietary needs, substitute almond milk for buttermilk or use gluten-free cake mix.
