- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup unsalted butter, softened
- 4 large egg whites

- 1 cup buttermilk
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg whites one at a time, then add the vanilla extract.
- In another bowl, mix the flour, baking powder, baking soda, and salt.
- Gradually alternate adding the dry ingredients and buttermilk to the butter mixture, mixing until just combined.
- Fold in the coconut and pecans.
- Pour the batter into a greased cake pan and bake for 30-35 minutes.
- Let the cake cool before serving.
