Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter and 1/4 cup of powdered sugar until light and fluffy.
- Mix in the lemon zest and vanilla extract.
- In another bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the butter mixture until combined.
- Form the dough into small balls and place them on the prepared baking sheet.
- Bake for 10-12 minutes, until the edges are lightly golden.
- Let cool for a few minutes, then dust with powdered sugar before serving.
Notes
- For an extra zesty flavor, you can add a little lemon juice to the dough.
