- 3 medium zucchinis, sliced
- 3 cups fresh spinach
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and black pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer sliced zucchini, followed by a layer of the ricotta mixture, then spinach, and top with mozzarella.
- Repeat the layers until all ingredients are used, finishing with mozzarella on top.
- Bake for 40-45 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
- For extra flavor, add garlic to the marinara sauce.
- You can substitute the ricotta cheese with cottage cheese if preferred.
