Ingredients

  • 3 medium zucchinis, sliced
  • 3 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and black pepper.
  3. Spread a layer of marinara sauce on the bottom of a baking dish.
  4. Layer sliced zucchini, followed by a layer of the ricotta mixture, then spinach, and top with mozzarella.
  5. Repeat the layers until all ingredients are used, finishing with mozzarella on top.
  6. Bake for 40-45 minutes until bubbly and golden.
  7. Let it cool for 10 minutes before serving.

Notes

  • For extra flavor, add garlic to the marinara sauce.
  • You can substitute the ricotta cheese with cottage cheese if preferred.
