- 2 cups grated zucchini
- 1 cup sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, combine the grated zucchini, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
- In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. If using, fold in the walnuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating together the cream cheese and butter until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
- Once the bars are completely cooled, spread the cream cheese frosting on top.
Notes
- These bars taste even better the next day!
- Feel free to add chocolate chips for an extra treat.
