  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, combine the grated zucchini, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. If using, fold in the walnuts.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. While the bars are baking, prepare the cream cheese frosting by beating together the cream cheese and butter until smooth.
  8. Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
  9. Once the bars are completely cooled, spread the cream cheese frosting on top.
