- 1 cup apple cider
- 1 1/2 cups all-purpose flour

Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a saucepan, bring apple cider to a boil and simmer until reduced, about 10-15 minutes.
- In a large bowl, cream butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in reduced apple cider and vanilla extract.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- Divide batter evenly among the cupcake liners.
- Bake for about 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before frosting with your favorite frosting.

- For an extra flavor boost, add chopped apples to the batter.
