- 8 ounces rice noodles
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced

- 2 green onions, chopped
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the garlic and ginger, cooking until fragrant.
- Add the ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in the mixed vegetables and cook until they are tender.
- Add the cooked noodles and soy sauce to the skillet, tossing to combine.
- Garnish with green onions before serving.
