- 1 pound shrimp, peeled and deveined
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/2 cup diced cucumber
- 1/4 cup chopped cilantro
- 1/4 cup fresh lime juice
- 1 avocado, diced
- 1 teaspoon hot sauce (optional)
- Salt to taste
Instructions
- In a large bowl, combine the shrimp and lime juice. Allow to marinate for about 15 minutes.
- In another bowl, mix the tomatoes, onion, cucumber, and cilantro.
- Add the marinated shrimp to the vegetable mixture and gently toss to combine.
- Season with salt and hot sauce, if using.
- Fold in the diced avocado just before serving.
- Serve chilled with tortilla chips or in glasses.
Notes
- For best flavor, let the shrimp marinate for longer if possible.
- Add more lime juice for a tangier taste.
