- 2 ripe plantains
- 1 cup black beans, drained and rinsed
- 1/2 cup diced bell pepper
- 1/2 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the ripe plantains in half lengthwise and scoop out some of the flesh to create a boat.
- In a bowl, combine black beans, bell pepper, corn, cumin, chili powder, and salt.
- Fill each plantain half with the bean mixture and top with cheese if desired.
- Place on a baking sheet and bake for 20-25 minutes, until heated through and slightly crispy.
- Remove from oven and serve hot.
Notes
- For a spicier kick, add jalapeños to the filling.
- This dish can be served as a main course or a side dish.
