Ingredients

  • 2 ripe plantains
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced bell pepper
  • 1/2 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the ripe plantains in half lengthwise and scoop out some of the flesh to create a boat.
  3. In a bowl, combine black beans, bell pepper, corn, cumin, chili powder, and salt.
  4. Fill each plantain half with the bean mixture and top with cheese if desired.
  5. Place on a baking sheet and bake for 20-25 minutes, until heated through and slightly crispy.
  6. Remove from oven and serve hot.
