- 4 pounds beef shoulder
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons vinegar
- 1 tablespoon oregano
- 1 tablespoon cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup beef broth
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix garlic, olive oil, soy sauce, vinegar, oregano, cumin, black pepper, and salt to create a marinade.
- Rub the marinade all over the beef shoulder and let it marinate for at least 2 hours, preferably overnight.
- Place the marinated beef in a roasting pan and add beef broth to the bottom of the pan.
- Cover the roasting pan with foil and cook for about 3 hours, or until the meat is tender.
- Remove the foil and cook for an additional 30 minutes to develop a crust.
- Let the roast rest for 15-20 minutes before slicing.
Notes
- For extra flavor, consider adding citrus juice to the marinade.
- This roast pairs well with rice or potatoes.
