- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp salt
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- ½ cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the milk and vanilla extract.
- In another bowl, combine flour, baking powder, and salt. Gradually add this to the wet ingredients.
- Fold in the mixed berries.
- Pour the batter into a greased sheet cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Frost the cooled cake with the whipped cream and top with additional berries if desired.
Notes
- For best results, use fresh berries.
- This cake is best served chilled.
