- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup reduced-fat milk
- 1 cup turkey bacon, cooked and chopped
- 1 cup chicken ham, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion becomes translucent.
- Add the broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the cheddar cheese and reduced-fat milk until the cheese is melted and incorporated.
- Add the chopped turkey bacon and chicken ham. Season with salt and pepper to taste.
- Serve hot and enjoy!
