Ingredients

  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup reduced-fat milk
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup chicken ham, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion becomes translucent.
  2. Add the broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in the cheddar cheese and reduced-fat milk until the cheese is melted and incorporated.
  5. Add the chopped turkey bacon and chicken ham. Season with salt and pepper to taste.
