- 4 boneless, skinless chicken breasts
- 8 ounces fresh mozzarella cheese, sliced
- 2 large tomatoes, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cut a pocket in each chicken breast to stuff.
- Inside the pocket, add slices of mozzarella, tomatoes, and basil leaves.
- Season the outside of the chicken with garlic powder, salt, and pepper.
- Drizzle olive oil and balsamic vinegar over the chicken.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until cooked through.
- Let it rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken for a few hours before cooking.
- Serve with a side of salad or pasta for a complete meal.
