  • 4 boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut a pocket in each chicken breast to stuff.
  3. Inside the pocket, add slices of mozzarella, tomatoes, and basil leaves.
  4. Season the outside of the chicken with garlic powder, salt, and pepper.
  5. Drizzle olive oil and balsamic vinegar over the chicken.
  6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until cooked through.
  7. Let it rest for a few minutes before serving.
