- 4 cups sliced zucchini
- 15 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ricotta cheese, eggs, garlic powder, oregano, salt, and pepper.
- Layer half of the zucchini in a greased baking dish.
- Spoon half of the ricotta mixture over the zucchini.
- Repeat with the remaining zucchini and ricotta mixture.
- Top with mozzarella and Parmesan cheese.
- Drizzle with olive oil.
- Bake for 35-40 minutes, or until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For added flavor, sprinkle fresh herbs on top before serving.
