- 1 cup fresh broccoli, chopped
- 1 cup shredded cheddar cheese
- 1 cup cornmeal
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the cornmeal, sugar, baking powder, and salt.
- In another bowl, whisk together the buttermilk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped broccoli and shredded cheddar cheese.
- Pour the batter into a greased baking dish.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before slicing and serving.
Notes
- This cornbread can be served warm or at room temperature.
- Feel free to substitute different cheeses or add additional spices for a twist!
