- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine spinach, ricotta cheese, mozzarella cheese, garlic, salt, pepper, and Italian seasoning.
- Cut a pocket in each chicken breast and stuff with the cheese and spinach mixture.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken for 5 minutes on each side.
- Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through.

- For added flavor, consider marinating the chicken overnight.
- Serve with a side of vegetables or pasta.
